Root Vegetable Fries

Ingredients: 2TBS Avocado oil, s&p, Garlic Powder, Parsnips, Carrots and Sweet Potatoes, peeled and cut into equal sized fries

  • Preheat oven to 425*F

  • Toss cut root vegetables in a large bowl with avocado oil to coat evenly

  • Sprinkle in s&p and spices, toss again

  • Lay the root veges on a parchment lined baking sheet so they are not overlapping

  • Cook for 15 minutes

  • Remove from oven, flip them over the best you can

  • Cook for an additional 10-15 minutes

  • Optional: Increase oven to Broil, and finish the fries for 2-3 min

  • Serve with your favorite dipping sauce.

A few sauce suggestions: Avocado aioli (mashed avocado + mayo + lemon + garlic, loosely), Red Sauce (ketchup + mayo + spicy mustard + hot sauce) or just some nice mayo with lemon juice whisked in.
